1 cup cherry tomatoes, halved

1/2 cup fresh basil leaves

1/4 cup pine nuts

1/2 cup grated Parmesan cheese

2 cloves garlic

1/2 cup extra-virgin olive oil

Salt and pepper to taste

Instructions:

In a food processor, combine basil, pine nuts, garlic, and Parmesan.

Pulse until finely chopped.

With the processor running, slowly pour in the olive oil until the mixture forms a smooth pesto.

In a large pan, sauté zucchini noodles for 3-5 minutes until slightly softened.

Toss the noodles with pesto and cherry tomatoes.

Season with salt and pepper and serve.
